Quince in vanilla syrup turns out to be soft, aromatic, almost caramel. For lovers of quince, this oriental delicacy will be to their taste. Serve cold or warm with whipped cream.

- For four servings:
- - 500 ml of water;
- - 250 g of sugar;
- - 5 pieces. quince;
- - 1 lemon;
- - 1 vanilla pod;
- - peppercorns.
Instructions
Step 1
Cut the vanilla pod in half, put it in a wide non-metallic saucepan, add lemon zest, sugar, water, peppercorns there. Put on medium heat, cook until sugar dissolves, stirring occasionally. After that, reduce the heat under the saucepan.
Step 2
Peel the quince, cut into quarters, remove all the seeds. Immediately dip each quince slice in the syrup, which should completely cover them. Cover the pan with parchment on top, cook for half an hour, during which time the quince will become tender and soft.
Step 3
Transfer the quince with a slotted spoon to a bowl, and boil the syrup over high heat for ten minutes so that it boils down to at least a third.
Step 4
Pour the finished quince on top with sweet aromatic syrup, serve as an independent dessert for tea, or use it in the preparation of various desserts as a filling.
