- burgundy beets - 3 pcs.,
- chicken eggs - 4 pcs.,
- fresh cucumber - 4 pcs,
- kefir - 0.5 l,
- lemon - 1 pc.,
- green onions - a bunch,
- dill - a bunch
- salt and pepper to taste.
Instructions
Step 1
Rinse the beets, peel them, put them in a pot of water, cook until tender.
Step 2
Remove the finished vegetables from the broth and grate. Cool the broth.
Step 3
Squeeze the juice out of the lemon, mix it with grated beets and salt.
Step 4
Wash the eggs, boil hard-boiled, cool and peel. Then grate them. Wash cucumbers, grate.
Step 5
Rinse bunches of greens, dry slightly. Chop finely and mix with salt.
Step 6
Combine the resulting ingredients in a common bowl, mix, add the beet broth.
Step 7
Cool the vegetable mass and kefir well. Before serving the soup on the table, put the beet mass in soup bowls, cover with kefir.
