"Mother-in-law's language" is a dish from the category of cold snacks. It fully justifies its name. A spicy and at the same time quite spicy garlic-curd filling is wrapped in a slice of eggplant, resembling a real tongue in shape.

An all-time snack

For cooking, you need to take the following ingredients:

- young eggplants - 6 pieces;

- tomatoes - 2-3 pieces;

- cottage cheese or feta cheese - 150 grams;

- mayonnaise - 100 ml;

- walnuts - 130 grams;

- vegetable oil for frying - 100 ml;

- flour for breading - 3 tbsp. spoons;

- garlic - 7 cloves;

- cilantro - 1 bunch;

- salt.

First, you need to prepare the eggplant for a snack. To do this, select younger fruits with thin skin, rinse and wipe them off. Then cut the eggplants along the length of the growth into slices about half a centimeter thick. Heat the oil in a wide frying pan, sprinkle the eggplants with flour and put in the pan, fry them on both sides. Place the fried eggplant slices on a cutting board and cool.

For the filling, you can use salted cheese or salted cottage cheese. Thoroughly crush the curd mass with a fork or break it with a blender, peel the cloves of garlic and crush, combining them together with the curd mass. Add mayonnaise to the filling. Fans of spicy food can also add a pinch of hot pepper to this mass, then the filling will become more scalding.

Chop the walnuts, remove all the shells and partitions and fry the kernels in a pan without oil, then grind the nuts with a blender, they should be crushed only to small pieces. Put the nut mass in the curd filling and mix all the ingredients again.

Spread the cooled slices of fried eggplant on a cutting board, put a teaspoon of spicy curd filling on each slice. Rinse the tomatoes, dry and cut into small slices, put them on top of the filling so that the slice hangs from one side, put a sprig of cilantro next to it. Roll the eggplant slice into a roll and secure with a wooden toothpick. Transfer the resulting rolls to a dish, garnish with green sprigs of cilantro and tomato slices.

"Mother-in-law's language" - the second option

The hostesses loved this dish so much that they began to prepare similar snacks based on it. So, for example, a not too sharp "mother-in-law's tongue" appeared from young zucchini stuffed with cheese and eggs. To prepare this option for a vegetable snack, you will need:

- milk zucchini - 3-4 pieces;

- Dutch cheese - 100 grams;

- eggs - 2-3 pieces;

- tomato juice - 100 ml;

- dill - 1 bunch;

- garlic - 4 cloves;

- salt;

- mayonnaise - 100 ml.

Rinse and dry milk courgettes, cut in the same way as eggplants - in long slices. Since the courgettes are more tender and juicy, you can cut them into thicker slices. To keep the zucchini from spreading, instead of frying in oil, bake them on a grill rack, then place them on a cutting board to cool.

Grind the Dutch cheese on a grater, boil the eggs, cool and grind too, combine the ingredients for the filling together, mix. Rinse a bunch of dill greens, let the moisture drain and chop very finely, put in the cheese mass, add mayonnaise and mix the ingredients again.

Peel the garlic cloves, rinse and crush with a press. Transfer one half to the cheese mass, and stir the other in tomato juice, add a little salt to the juice.

Take a wide, deep bowl, put the cooled zucchini slices into it and cover completely with tomato juice and garlic. Leave in this state for as long as possible to soak the zucchini with the garlic juice.

Place the soaked zucchini slices on a board, top with the cheese filling and roll the slices into rolls. Fasten the finished rolls with skewers, put on a dish, serve chilled.
