Achma is a Georgian pie with suluguni cheese. It is prepared from a large amount of boiled dough. Achma should not be sweet, and the cheese should be as salty as possible.

Step 1
Cooking the dough. Beat 5 eggs until foamy.

Pour in water, add flour and salt, knead the dough. The dough should be such that it can be rolled out.

Divide the dough into 8 pieces and let sit for 10 minutes.

Put a large pot of water to boil.

Grate the cheese on a coarse grater.

Roll out the dough as thin as possible and dip in boiling water for one minute.

Take out the dough and place it in a container of ice water. You will get a layer.

Remove the layer from the water and place it in a colander.

Place the slab gently on a pre-lubricated mold and rub the oils onto it.

Repeat all this three more times, sprinkling butter on the layer.

Then put half of the cheese, and then alternate layers with grated butter.
