Ingredients:

  • Zucchini - 350 g;
  • Garlic - 3 wedges;
  • Cauliflower - 600 g;
  • Onions - 150 g;
  • Tomato paste - 1 tablespoon;
  • Salt and spices;
  • Carrots - 150 g;
  • Butter - 1 tablespoon;
  • Fresh greens;
  • Tomatoes - 350 g;
  • Vegetable oil - 20 ml;
  • Granulated sugar - 1 tsp

Preparation:

  1. We prepare onions and carrots for frying: peel, rinse and chop into medium-sized slices (carrots can be chopped on a grater). The first to go to the pan with heated oil is the onion. As soon as it gets a little gilded, add the carrots and stir everything well. Cooking for a couple of minutes.
  2. Put a tablespoon of tomato paste or homemade ketchup in the pan (it will take twice as much; note: a store product will not work, since it categorically does not accept heating). We continue frying for about a minute.
  3. We wash and clean the zucchini or ordinary zucchini (if the vegetable is young, the skin can be left). Remove the seeds and cut the pulp into medium-sized cubes. We put it in a frying pan.
  4. There is no need to boil cauliflower on the eve of cooking - it is enough to rinse thoroughly and divide into inflorescences. She will go to the stew after the zucchini; after that, cover the pan with a lid, and adjust the heat to low power.
  5. My tomatoes. Remove the skin (if you cannot pick it up with a knife, pour boiling water over the tomatoes, and then immediately transfer to cold water). We cut the pulp and also send it to the pan.
  6. After mixing, leave the vegetables to simmer under the lid for 20 minutes (heating should be minimal). There is no need to add water - enough juice is formed.
  7. After the expiration date, season the dish to taste. Put chopped garlic along with salt, sugar and ground spices. Stir, cover and cook the stew for another five minutes (if the vegetables are not completely softened, add an additional 5-10 minutes).

In the process of serving, we generously decorate the dish with fresh herbs.
