Let's not argue about whether a berry or a vegetable is a pumpkin. Whatever you call it, it is available to everyone: it is perfectly stored fresh and frozen, it is always available in stores as a whole, or in halves, quarters and even slices. Many dishes are prepared from it. They are baked whole in the oven, cut into pieces, side dishes, sweet cereals and soups that are sweet-spicy or neutral in taste are prepared. Soups are perhaps the most popular pumpkin dish. Try one of them!
It is necessary
- Fresh or frozen pumpkin - 400 g;
- Potatoes - 5 medium tubers;
- Carrots - 1 pc.;
- Tomato - 1 pc.;
- Onions - 1 pc.;
- Cream 10-20% fat - 100 ml;
- Frying oil. You can use both vegetable and cream;
- Broth (chicken, meat, vegetable - any) or water - 500 ml;
- Mushrooms (ideally chanterelles, but any others will do, you can use fresh champignons) - 400 g;
- Salt and pepper to taste;
- Spices to taste. These can be: a slice of chili, cardamom, mint, ginger, saffron, nutmeg, curry;
- Bread. You can make croutons from it if you wish.
Instructions
Step 1
We wash vegetables and mushrooms. Cut the tomato skin crosswise on both sides: where the stalk was and on the opposite side.
Step 2
Dip the tomato into the boiling broth. Meanwhile, cut the rest of the vegetables into cubes. Cook the tomato until the skin is wrinkled. Take it out with a slotted spoon and place it under running cold water. The peel is easy to remove. Dip the peeled tomato into the broth again.
Instead of one large tomato, you can add several small cherry tomatoes. Their taste is excellent. Both fresh and dried are suitable. The latter can be simply thrown away after cooking. Do not cut the skin.
Step 3
Put all the other vegetables in the broth, except for the onions. We do not add water. Cook until soft. Salt, pepper, add spices to taste if necessary.
Step 4
Fry the onions in a skillet until lightly browned.
Step 5
Cut the mushrooms and fry in another pan. Salt and pepper to taste. The recipe uses fresh champignons. They are always on sale and prepare quickly.
Step 6
Combine ready-made vegetables with fried onions, mix and puree with a blender.
Step 7
Add cream to the puree soup, mix again, heat, but do not boil. The soup is ready.
Step 8
Put a tablespoon of fried mushrooms in each plate and sprinkle with herbs as desired. You can also add croutons or use them instead of mushrooms.
