Fusilli is a type of noodle, a standard Italian pasta that looks like a spiral. The name comes from the word "fuso" (Italian for "spindle"). Pumpkin and mushroom soup with fusilli turns out to be very original, and most importantly - hearty. Serve it immediately after the end of cooking.
It is necessary
- - 2 liters of water;
- - 200 g of meat;
- - 150 g of champignons;
- - 150 g of peeled pumpkin;
- - 5 potatoes;
- - 1 carrot, 1 onion;
- - 50 g fusilli;
- - olive oil, herbs, butter;
- - pepper, salt.
Instructions
Step 1
Put an onion and a piece of meat (lamb or pork) in the water, put the broth to boil.
Step 2
Peel potatoes, cut into cubes, add to broth. After boiling, simmer for 20 minutes over moderate heat.
Step 3
Cut the pumpkin into cubes. Peel the carrots, rinse the mushrooms, fry in olive oil. Add 15 g butter at the end of the frying.
Step 4
Add mushroom frying and pumpkin to the pot to the finished potatoes. Cook until pumpkin is soft. Remove the meat, beat the contents of the pan with a blender until smooth. Season with pepper and salt to taste.
Step 5
Cut the meat into pieces, fry in butter. Add meat to soup. Send to the pan and fusilli. Cook for 10 minutes, add chopped greens at the end.
