Delicious vegetable salad with rice is a great addition to side dishes in winter. Also, such a blank can be used as an independent dish for a quick snack.
It is necessary
- - 1 kg of carrots,
- - 1 kg of onions,
- - 1 kg of bell pepper,
- - 1 kg tomato,
- - 1 cup (200 ml) rice
- - 350 g of vegetable oil,
- - 0.5 cups (200 ml) vinegar
- - 1, 5 Art. l salt,
- - 1 tbsp. a spoonful of sugar.
Instructions
Step 1
Rinse and peel the vegetables thoroughly.
Step 2
Rinse the rice until the water is transparent, boil for ten minutes. Salt water for rice a little, boil in proportions 1 to 3.
Step 3
Throw the boiled rice in a colander and rinse so that it is crumbly.
Step 4
Grate the peeled carrots on a coarse grater.
Step 5
Put grated carrots in a saucepan or stewpan, add 350 g of vegetable oil, 1 tbsp. a spoonful of sugar and one and a half tablespoons of salt, pour in half a glass of vinegar, simmer over high heat for ten minutes.
Step 6
While the carrots are stewing, cut the onion into medium cubes. Add onions to carrots, simmer for five minutes.
Step 7
Cut the bell pepper into small cubes and mix it with vegetables, simmer for five minutes.
Step 8
Cut the tomatoes into small pieces. Add tomatoes to vegetables, stir and simmer for five minutes. Then add boiled rice to the vegetables. Simmer vegetables with rice for half an hour, stir occasionally.
Step 9
Prepare salad jars (sterilize). Arrange the salad in jars, roll up the lids, let cool and store in the pantry.
