Cherries go well with almost any type of dough. It can be used both fresh and frozen as a filling. Cherries are very juicy berries, and this feature must be taken into account when baking pies.

Prepare the shortbread dough first. Mash softened butter with sugar and vanilla sugar, add an egg and mix thoroughly.

Combine flour with baking powder and sieve through a sieve to enrich with oxygen, then pour into the butter and egg mixture. Knead the dough and refrigerate for 1-1.5 hours.

This dough can be prepared in advance: it can be stored in the freezer for up to 2-3 months. You can also try its lean version, replacing butter with vegetable or margarine, and the egg with ¼ glass of water. Also, sugar is not a required dough ingredient in this pie, so use it as desired.
Step 4
The juice escaping from the cherry can cause the dough to get wet and the cake will not bake well. To avoid this, make a filling with potato or cornstarch.
Step 5
Pre-thaw cherries at room temperature or in the microwave. Place the berries in a colander and place a bowl for the dripping juice. Measure the volume of liquid obtained and add water up to 1 liter.
Step 6
Pour the starch into 1 cup of cherry juice and stir well. Pour the remaining liquid into a saucepan, add 100-150 g of sugar, depending on your taste, boil and add diluted starch. Then put the berries in a saucepan and stir until thickened.

Take a baking dish with a diameter of 24-26 cm, grease with oil, spread the dough over it, make sides. Then lay out and flatten the filling. Bake the pie in an oven preheated to 180 degrees for 25-30 minutes.
Step 8
You can make the cherry pie covered or with a lid. To do this, increase the amount of ingredients for the dough by 1, 5-2 times, knead, cool and divide it into 2 unequal parts. Spread the large one over the bottom of the mold, and roll the smaller one into a layer and cover the cake with it.

To make the top a wire rack, cut a smaller slice of dough into long strips and spread them over the filling. With the help of a curly roller knife, you can make the edges of the strips grooved.
