Cold cheesecake is a traditional English pie with delicate cream cheese. Due to the lack of a baking process, it is not at all difficult to prepare it. The only condition is to keep it in the refrigerator for the right time.

- shortbread cookies - 250 g;
- butter - 10 tablespoons;
- mascarpone cheese - 250 g;
- cream cheese - 250 g;
- gelatin - 3 tsp;
- lemon juice 100 ml;
- sugar - 3 tbsp;
- cream - 450 ml;
- vanilla and berries to taste.

Step 1
Make a cookie base. Unlike hot American cheesecake, which requires a baked biscuit, an English pie is made from any crumbly biscuit. Crush it with your hands into small pieces, put them in a plastic bag in an even layer and grind with a rolling pin. Ideally, the cookie crumbs should be quite small.
Step 2
Melt the butter over low heat and then cool to room temperature. Then add it to the crushed cookies and mix thoroughly until smooth.
Step 3
Place the pastry dough into a 20 cm round baking pan. Spread evenly and press down lightly with a spoon. It is very important that the dishes have removable sides - you simply cannot get a cold cheesecake out of another.
Step 4
Squeeze the juice of several lemons into a glass saucepan, add a teaspoon of water, and place the dishes in a water bath. As soon as the liquid starts to heat up, slowly pour in the gelatin and stir until it dissolves. Then add sugar there and stir it also until it is completely dissolved.
Step 5
Warm the cream to room temperature, add mascarpone cheese and any other cream cheese to it. Then beat the ingredients well until smooth.
Step 6
Add a little vanilla to the solution and pour in the dissolved gelatin. Mix everything thoroughly and carefully pour the creamy mass onto the cookie base. Gently level the surface and refrigerate for at least 4 hours.
Step 7
Garnish the frozen cheesecake with fresh fruit or berries and sprinkle with powdered sugar. Especially delicious cheesecake is made with raspberries or strawberries. You can also sprinkle the cake with chocolate chips, drizzle with melted chocolate, or top with a few mint leaves.
