To make a traditional shish kebab tasty, soft and juicy, you need to choose the right meat, cut it across the fibers into approximately equal pieces and marinate. For a chicken or fish kebab, the preparatory work will be different, one thing is invariably a good marinade.
The best recipes for barbecue marinades are given per 1 kg of the title ingredient. Marinate meat, poultry or fish from 1 to 3 hours - depending on the size of the pieces.
Pork kebab marinade
Ingredients you will need:
- 100 g of soy sauce;
- 10 g of mustard;
- 5 g of sugar;
- 1 g of citric acid;
- 1 g of crushed black pepper.
Cooking pork kebab marinade
Toss the soy sauce with the mustard (if using sweet mustard, reduce the amount of sugar given in the recipe). Add spices, let it brew for about 6-7 minutes, then strain through cheesecloth folded in several layers. An important point: there should be no solid particles in the kebab marinade. Otherwise, the pork pieces will burn and the kebab may be spoiled.
Lamb barbecue marinade
Ingredients you will need:
- 100 g of vegetable oil;
- 30 g lemon juice;
- 6 g of sumac;
- 4 g of sea salt;
- 2 g star anise;
- 2 g of crushed black pepper.
Cooking lamb kebab marinade
Squeeze the juice out of the lemon, be sure to strain it, if seeds are caught - they can taste bitter. Pour vegetable oil into the juice, dissolve sea salt in this mixture. Sumac, star anise, crushed black pepper, tie in cheesecloth and dip in the marinade. Put on a low heat, heat up to 60-80 degrees, let cool. After complete cooling, remove the gauze with spices by squeezing out the liquid fraction. According to many chefs, this is the best marinade for lamb barbecue.
Chicken kebab marinade
Ingredients you will need:
- 50 g of vegetable oil;
- 50 g of soy sauce;
- 10 g of honey;
- 5 g of fresh ginger juice;
- 5 g of garlic;
- 1 g of citric acid.
Making chicken kebab marinade
Rub a piece of ginger root. Pass a few cloves of garlic through a press. Squeeze juice out of them. Stir in honey, adding vegetable oil drop by drop. You should get a homogeneous emulsion with a consistency reminiscent of liquid mayonnaise. Dissolve citric acid in soy sauce until no crystals remain visible. Combine both mixtures. If using unsalted soy sauce, you can add some sea salt to the chicken skewer marinade.
Marinade for fish kebab
Ingredients you will need:
- 50 ml lemon juice;
- 50 ml of extra virgin olive oil;
- 3 g rosemary;
- 3 g of sea salt;
- 2 g of crushed white pepper.
Cooking fish kebab marinade
Heat the lemon juice, rosemary sprig and crushed white pepper to about 80 degrees. Cool slowly, strain through several layers of cheesecloth, add sea salt. When it dissolves, pour in the extra virgin olive oil. Mix well. In this recipe, it is important not to change the sequence of actions. If you mix lemon juice with oil, and then heat it, the fish kebab will taste bitter after such a marinade.
