Summer is the time for picnics in nature and, of course, barbecue. You can hardly surprise anyone with standard marinades with vinegar, mayonnaise, kefir, lemon. But there are also unusual recipes for marinades that will give the meat an original and interesting taste.
Beer-based marinade
Suitable for any meat except chicken and turkey.
For 1 kg of pre-cut meat, you need to take: salt and seasonings to taste, a liter of beer (preferably draft). Marinating time - 3 hours.
Olive oil marinade
For 1 kg of beef, cut into pieces, you need 1 onion rings, 4-5 tablespoons of premium oil, a bunch of any greens, salt to taste. Soaking time is 5-6 hours.
Fruit pickles
Grapefruit and kiwi are good alternatives to lemon. This marinade goes best with beef and pork. For 1 kg of meat, take one grapefruit cut into cubes or 3 medium kiwis, salt and pepper to taste, any greens. The exposure time is 5-6 hours.
Canned pineapple can be used for chicken and turkey. For 1 kg - one can, 2 tablespoons of olive oil, half a glass of orange juice, curry and salt.
Pickle with brine
For 1 kg of beef or pork, you need to take: 1 liter of brine left over from canned cucumbers or tomatoes, 2 small onions, 1 teaspoon each of black and red pepper. Marinating time - 6-8 hours.
Spicy and sweet marinade with teriyaki sauce
This sauce goes well with chicken. For 1 kg of any parts of chicken or fillet, you will need: 3 tablespoons of teriyaki sauce, 1-2 cloves of finely chopped garlic, seasonings and salt to taste, 1 tablespoon of soy sauce. Soaking time is 2 hours.
Marinade with tomato juice
For 1 kg of beef or pork, you need to take: 1 onion, 1 clove of garlic, seasonings and salt to taste, half a liter of tomato juice (better homemade, but even tomato paste diluted in water will do). Marinating time - 5-6 hours.
Marinade with cognac
Pre-marinate 1 kg of pork with onions, spices, 2-3 cloves of garlic, 3 tablespoons of soy sauce. After 30 minutes, pour in half a glass of brandy and 1 glass of cold boiled water. Leave to marinate for 4 hours.
Marinade with tea leaves
For 1 kg of meat, you will need a strong infusion of black leaf tea and 1 liter of boiling water. While the tea leaves are cooling, the meat is cut into pieces, sprinkled with salt, spices and finely chopped onions. And then it is poured with cooled and strained tea leaves. The steeping time is 3 hours for chicken and 5-6 hours for the rest of the meat.
Japanese marinade
For 1 kg of pork or beef, take: 200 grams of soy sauce, a bunch of cilantro, 2 limes, 70 grams of grated ginger root, 50 ml of sesame oil, a small chili pepper, a little salt. The infusion time is 4 hours.
Marinade with honey
It goes well with chicken and pork. For 1 kg of meat you need to take: 2 tablespoons of honey, half a small fresh pineapple, half a glass of soy sauce, 2 tablespoons of apple cider vinegar, a few cloves of garlic, spices and salt to taste.
