Stewed meat soup is a dish that is fast cooking. It can be cooked from any kind of canned meat, but in all cases it turns out to be very tasty and aromatic.
To make a hearty first course, you need to boil the broth. If time is very short, you can replace the meat with stew. Stew-based soups are popular with housewives who often have to whip up a meal. The cooking time in this case is significantly reduced, but this does not negatively affect the taste of the first course.
Hearty and healthy soup can be cooked from pork or beef stew. At the same time, it is advisable to choose high-quality canned food with whole pieces of meat.
Stewed meat soup with potatoes
To cook a simple, but very aromatic and tasty soup, you will need:
- can of stew (beef or pork);
- 3-4 potato tubers;
- 2 carrots;
- medium-sized onion;
- 2-3 st. l very small pasta;
- bay leaf;
- greens;
- salt to taste.
Cooking steps:
- Peel and cut the potatoes into small cubes. Pour water into a saucepan, add a little salt, bring to a boil, put potatoes and cook for about 5 minutes.
- Peel the carrots and onions. Chop the onion very finely, and grate the carrots on a coarse grater. Fry vegetables in vegetable oil quite a bit. They should only become softer and acquire a golden hue.
- Place vegetables in a saucepan. Open a jar of stewed meat, tip its contents directly into the pan, along with pieces of fat and gravy. If you want to make the soup more lean, you can put only pieces of meat in it. Cover the saucepan with a lid and simmer over medium heat for 10 minutes.
- Open the lid, add chopped herbs, very small pasta (like "cobwebs"), bay leaf. Cook the dish for another 5 minutes over low heat, and then turn off the stove and pour the soup into portioned bowls.
Stewed meat soup with buckwheat
To make the soup less nutritious and more useful, you can add buckwheat and fresh vegetables to it. To prepare such an interesting dish you will need:
- can of stew (preferably beef);
- half a glass of buckwheat;
- large carrots;
- onion;
- sweet bell pepper;
- a bunch of greens (dill or parsley);
- salt to taste;
- bay leaf.
Cooking steps:
- Peel the vegetables carefully. Finely chop the onion. Grate the carrots on a coarse grater, and cut the pepper into thin and short slices. You can use a special grater to grind peppers. Finely chop the greens with a knife.
- Pour water into a saucepan, add a little salt and bring to a boil. Rinse buckwheat and put in boiling water. Open a can of stewed meat, put the meat in a saucepan. You can drain the liquid from canned food, but it is better to put large pieces of fat aside. Boil the soup for 5 minutes.
- Put the prepared vegetables in a saucepan, close it with a lid and cook the soup over low heat for 10 minutes. Add greens and bay leaf 3 minutes before cooking.
You can serve stewed meat soup with buckwheat with sour cream.
Stewed meat soup with tomatoes and sorrel
A very successful stewed meat soup is obtained if you cook it with the addition of tomatoes and beans. To prepare such a dish you will need:
- a jar of stew;
- 2 ripe tomatoes;
- bulb;
- large carrots;
- a bunch of sorrel;
- a little salt;
- 2-3 potato tubers;
- 2 eggs.
Cooking steps:
- Peel carrots and onions. Chop the onion very finely and grate the carrots. Cut the tomatoes crosswise in the area of the stalk and scald with boiling water, then remove the skin. Cut the tomatoes into large cubes. Rinse the sorrel and cut into large strips. Peel and dice the potatoes.
- In a frying pan, fry in a small amount of vegetable oil onions and carrots. When they soften slightly, the onion will become transparent, add tomato cubes to the pan and simmer under a closed lid for 5-7 minutes over very low heat.
- Pour water into a saucepan, bring to a boil. Put the vegetables out of the pan. Open a jar of stew and put pieces of meat from it into the soup. Cook for 10 minutes over low heat. 5 minutes before being ready, add chopped sorrel to the pan, add a little salt. When cooking stew-based soups, you need to be careful with salting, since some types of canned meat already contain a lot of salt.
- Beat eggs in a separate bowl. 2 minutes before being ready, pour the eggs in a thin stream into the boiling soup, stirring constantly. Serve hot. When serving, put a little sour cream in each portion. You can add a slice of boiled egg to each plate.
Stewed meat soup with lentils
A very tasty and healthy homemade soup can be made from stewed meat and lentils. This will require:
- can of stew (preferably not very fatty);
- half a glass of lentils;
- large carrots;
- 2 potato tubers;
- onion;
- a bunch of greens (dill or parsley);
- bay leaf;
- salt to taste.
Cooking steps:
- Peel the vegetables well. Cut the onion into 2 pieces. Cut the carrots into slices. Cut the potatoes into cubes. Rinse the lentils, pre-soak them in cold water for 1 hour.
- Pour water into a saucepan, bring salt to a boil, pour prepared lentils, cut onion and cook for 10 minutes. The lentils should be cooked until half cooked. The cooking time can be adjusted according to the size and type of beans. Red lentils are the quickest to boil.
- Add potatoes and carrots, put the contents of a can of stewed meat and cook for another 10-15 minutes. 5 minutes before being ready, pour chopped herbs into a saucepan and add a bay leaf.
- Before serving, put the cut onion and bay leaf from the pan. You can add a little sour cream or grated cheese to each serving.
Lentil soup can be topped with croutons or served with lightly toasted garlic toasted bread.
Stewed meat soup with mushrooms and beans
To make a very hearty soup you will need:
- can of stew (preferably beef);
- half a glass of young beans;
- large carrots;
- onion;
- 200 g of champignons (can be replaced with forest mushrooms);
- a bunch of greens (dill or parsley);
- salt to taste;
- bay leaf.
Cooking steps:
- Peel the vegetables, then chop the onion finely, and grate the carrots on a coarse grater. Rinse greens and cut with a knife. Peel the mushrooms and cut each into 2-4 pieces, depending on the size. It is recommended to soak beans in cold water for 2-4 hours before boiling. This will shorten the cooking time. The soup made from young beans turns out to be very tasty.
- Pour water into a saucepan, bring to a boil, salt and add beans. Cook for 20 minutes.
- Fry onions with carrots in a small amount of vegetable oil (it is better to choose refined sunflower oil). When the onion becomes transparent, put the mushrooms in the pan and cook for another 3 minutes over low heat, stirring constantly.
- Put onion with carrots and mushrooms, as well as the contents of a jar of stew and chopped greens in a saucepan with beans being prepared. Cook under a closed lid for 10 minutes, then pour the soup into portioned plates and serve.
The proportions when preparing stewed soup according to the selected recipe can be slightly adjusted, but do not put too much beans or any other cereals in the broth, as the first course may turn out to be too thick, like porridge. During the cooking process, beans and cereals are very soft.
