Quesadilla is a Mexican dish that is as common in Mexico as pizza is in Italy. Distinctive features of this dish are corn tortillas, between which any filling is placed, necessarily sprinkled with cheese and served with Mexican sauces. This recipe includes not one, but 4 ground beef tortillas, somewhat reminiscent of Italian lasagna.

It is necessary

  • For 4 persons:
  • - 600 g of lean beef passed through a meat grinder;
  • - 1 tablespoon of olive oil;
  • - 1 onion, finely chopped;
  • - 480 g of quesadillas or 8 tortillas;
  • - 400 g of canned red beans;
  • - 2 medium tomatoes, finely chopped;
  • 1/4 cup marinated jalapeno chili (green hot peppers), finely chopped
  • - 1 1/3 cups low-fat grated cheese
  • - guacamole (avocado pulp sauce), chopped red chili and lime wedges for garnish.

Step 1

Preheat oven to 180-200 ° C. Lightly oil a baking dish.

Pour olive oil into a large skillet and heat over medium heat. Add the onions, sauté, stirring occasionally, for 3 minutes, until the onions are tender. Add ground beef. Stir with a wooden spoon to crush the minced meat, for 4 minutes, until browned. Add seasoning, canned beans and 1/3 cup cold water. Cook, stirring occasionally, for 2-3 minutes, until the mixture thickens.

Step 3

Remove 2 tortillas from the quesadilla set. Place a third of the minced meat on a flatbread, sprinkle with a third of chopped chili and tomatoes. Sprinkle 1/3 cup grated cheese on top. Repeat the layers with the rest of the cakes. Brush the top tortilla with salsa sauce (sauce made from boiled and chopped tomatoes with spices) and sprinkle with the remaining grated cheese. Bake for 20-25 minutes until golden brown. When the dish is ready, remove from the oven and let sit for 10 minutes. Cut into slices. Serve with guacamole (avocado puree), finely chopped chili and lime wedges.
