Summer is the time for berries. They can be eaten fresh, frozen, canned. And you can cook delicious summer pies and cakes. For example, here's a strawberry cake.

- - 300-500 grams of strawberries.
- For decoration:
- - 3 squirrels,
- - 230 grams of sugar
- - 80 milliliters of water,
- - food coloring of the desired color,
- - 5 large strawberries.
Instructions
Step 1
Prepare the cakes. Carefully divide 7 eggs into yolks and whites. Whisk the whites with 100 grams of sugar until a strong foam. Mix the remaining 100 grams of sugar with vanilla and mash with the yolks until white.
Step 2
Pour the yolk into the protein mass and mix. Add flour to the mixture. baking powder and starch. Mix gently.
Step 3
Line a baking sheet with parchment paper and spread out the dough in an equal layer. Bake over medium heat until tender (25-40 minutes, check readiness with a toothpick).
Step 4
To prepare the cream, combine vanillin and starch with sugar and mix with sour cream. Beat the resulting mass well with a mixer until the sugar dissolves. Slice the strawberries thinly.
Step 5
Cut the baked cake into 3 pieces of equal thickness. Dilute the strawberry syrup with water in a ratio of 1 to 1 and soak the resulting cakes with it. Layer each crust with cream and lay out with thin slices of strawberries. Put the cake in the refrigerator to soak for several hours.
Step 6
To make the decorating cream, beat three chilled egg whites until firm peaks. Boil water over low heat, add sugar (230 grams) to it and stir. While stirring, cook the syrup for 6-8 minutes.
Pour the hot syrup a little into the whites and beat with a mixer for about 10 minutes. Add food coloring to the resulting cream and mix.
Step 7
Transfer the finished cream to a pastry syringe or bag and decorate the cake. Place strawberries cut in half on top of the cream.
