Vegetable salads can be a great light dinner or a great side dish for many fish and vegetable dishes. Their preparation does not take much time, so you can pamper yourself with them even after a long day at work.
Salad with soft cheese and beets
Grate the boiled and peeled beets and place them in a heap in the middle of the plate. Crush some soft feta cheese on the beets and sprinkle with parsley. In a separate cup, combine 1: 1 olive oil and lemon juice and pour this dressing over the salad.
Shrimp and greens salad
Put the peeled shrimp in a frying pan with a little melted butter, pour over soy sauce and simmer for 3-5 minutes. On a flat plate, place a pinch of arugula and rocket salad, sprinkle the herbs with pine nuts, and arrange the cooked shrimp around the edges. Sprinkle everything with lemon juice and olive oil.
Peking cabbage, cucumber and cherry tomato salad
Finely chop the Chinese cabbage leaves and put them in a salad bowl. Add cucumber and cherry tomatoes cut into strips. Sprinkle everything with parsley. Season the salad with sea salt, lemon juice and olive oil. Mix everything and serve.
