Carrot salad with nuts and ginger

Ingredients:

- 4 carrots;

- 4 walnuts;

- 3 cm of ginger root;

- 2 sweet and sour apples;

- 20 g of honey;

- 30 ml of lemon juice;

- 70 ml of olive oil.

Peel the ginger root and grate it on a fine grater. Crush the walnut kernels in a mortar or coffee grinder. Cut the peel from the apple, cut the cores, cut the fruit pulp into strips. Grate the carrots coarsely. Combine all prepared foods in a beautiful salad bowl. Whisk separately honey, lemon juice and olive oil and season salad with this mixture.

Light New Year's salad with citrus

Ingredients:

- 2 oranges;

- 2, 5 tangerines;

- a quarter of a lemon;

- 4-5 leaves of green or Chinese salad;

- 70 g of blue cheese, for example, dorblu;

- 2 tsp brown sugar;

- 50 ml of olive oil.

Free the oranges and two tangerines from the skins and separate the juicy wedges from the release films. Cut the cheese into small cubes. Juice half a tangerine and a quarter of a lemon. Mix until smooth with olive oil and sugar. Wash and dry the lettuce leaves, tear them with your fingers and spread over a flat dish. Top with citrus slices, cheese and dressing.

Spicy low-calorie salad for the New Year's table

Ingredients:

- 2 sweet and sour apples;

- 2 stalks of celery;

- 150 g of hard unsweetened cheese;

- half a lemon;

- 100 g of low-fat natural yogurt;

- 30 ml of olive oil;

- 40 g of walnuts;

- 1/3 tsp each turmeric and ground allspice;

- 20 g of parsley;

- salt.

Cut the peeled apples into triangular slices and drizzle with lemon juice. Chop celery stalks and parsley leaves. Grate the cheese on a coarse grater. Place everything in a deep container. Stir in yoghurt with olive oil, spices and salt and pour the resulting bright yellow sauce over the rest of the salad. Sprinkle with walnuts just before serving.

Festive Shrimp Salad

Ingredients:

- 400 g of peeled boiled-frozen shrimps;

- small red onion;

- 150 g pitted olives;

- 2 tomatoes;

- Bulgarian pepper;

- ripe avocado;

- lemon;

- lime;

- 25 ml of apple cider vinegar;

- salt.

Boil water, dilute a little salt in it and scald the defrosted shrimp, discard them in a colander. Chop the onion finely and marinate it in vinegar for 10 minutes. Cut tomatoes and bell peppers into cubes, olives and shrimps into quarters. Mash the avocado flesh with a fork and drizzle with lemon juice to preserve the green color. Toss everything in a large bowl, add the remaining lemon juice, lime juice and salt to taste.
