Step 1

Wash the pumpkin and peel it. Cut the pumpkin in half, remove the seeds and inner fibers with a tablespoon of seeds. Cut the peeled pumpkin into slices, like a watermelon, so it is easier to grate.

Grate the pumpkin on a coarse grater. The amount of grated pumpkin can vary depending on the size of the baking dish. I got about 400 grams - half of a whole pumpkin.

Step 2

Add 2-3 eggs to the grated pumpkin, 100 ml kefir and sugar (to taste), salt a little. Mix everything well with a tablespoon. Add whole grain flour and baking powder. Add flour gradually, in portions, so that the dough turns out to be viscous, but not too hard, like for pancakes. The dough prepares quickly and mixes well - a few strokes with a spoon and you're done, so you don't need to use a mixer or blender.

Step 3

Peel the apples and remove the seed pods, grate them on a coarse grater. Add liquid honey, a couple of tablespoons, grated lemon zest, a little lemon juice, stir. Grease a baking dish with oil. Pour half the dough into the mold, distribute the grated apples evenly on top, smooth the surface with a spoon, slightly pressing the filling into the dough. If the honey is thick, spread it in slices on top of the filling. Pour the remaining dough evenly over the apples. Bake the pie for about 20 minutes at about 120 degrees. The baking time can be increased depending on the thickness of the cake. At the end of cooking, the temperature can be increased to create a crispy crust. You do not need to grease the cake before baking.
