Residents of Scandinavia treat herring and dishes from it with great reverence. Finnish housewives often prepare herring rolls with various fillings and sauces for the festive table. One of the options is herring with a savory filling and cranberry sauce.
You will need:
1 kilogram of herring fillet (fish halves);
3 medium onions;
1 glass of orange juice
2 tbsp. tablespoons of olive oil;
salt, ground black pepper to taste.
For the sauce:
1 cup cranberries
0.5 cups of sugar;
4 teaspoons of grated horseradish;
0.5 glasses of dry red wine;
salt, ground black pepper;
6 pcs. pears - fresh or canned for decoration;
greens for decoration.
Chop the onion finely, fry it in olive oil until golden brown, pour in orange juice, add salt and pepper. Simmer for 20-30 minutes until the juice evaporates, cool. Put the onion filling on long strips of herring, roll up the rolls and place them on a plate. Decorate with herbs and pear halves, pour over the sauce.
To prepare the sauce, cranberries need to be chopped with a blender, mixed with sugar until it is completely dissolved, add horseradish, wine, salt and spices. Mix everything thoroughly.
