- 3 medium zucchini;
- 4 eggs;
- 2 onions;
- 3 tbsp flour;
- 1, 5 cups vegetable oil;
- 100 g cheese, feta cheese;
- 1 tomato;
- a bunch of parsley;
- a bunch of dill;
- 1 tsp dry mint;
- salt
- ground pepper to taste.
Instructions
Step 1
Wash and peel the zucchini. Grate them finely or chop them with a blender or food processor. Salt the resulting mass, mix it properly, squeeze the resulting juice with your hands and drain it.
Step 2
Peel the onions, wash and grate. Mash the cheese.
Step 3
Peel the tomato and cut it into small cubes. Chop parsley and dill finely.
Step 4
Place all prepared ingredients in a bowl with grated zucchini. Beat the eggs lightly and pour into the mixture. Add salt, pepper, dry mint, flour and mix well.

Start frying the pancakes. Heat a skillet, pour some vegetable oil over it and reduce heat. Take some squash dough with a tablespoon and place in hot oil.

Place no more than four servings of dough in the skillet at a time, otherwise the pancakes may stick to each other. Fry them over medium heat until golden brown.

Turn the pancakes over with a spatula and fry on the other side. Place them on a plate.

Fry in this way the entire zucchini mass. Place the pancakes on a plate or bowl as they cook, wait for the oil to drain and transfer to a platter.
Step 9
Serve hot zucchini pancakes with mint on the table as a separate dish. You can put sour cream on them.
