Step 1

First of all, you should take care of the form in which the lean sausage will be prepared. This shape can be a tall plastic container or a plastic bottle with a cut off top. The selected container should be lubricated from the inside with a thin layer of vegetable oil.

Step 2

Pea flour can be purchased ready-made at the store, or you can grind split peas in a coffee grinder. Pour one glass of pea flour into a saucepan, gradually add one glass of cold water, stirring all the time so that no lumps form. Then carefully, without stopping stirring, pour in a glass of hot water. Salt to taste.

Step 3

Put the saucepan over high heat, bring to a boil with constant stirring. Reduce heat to minimum and cook, with occasional stirring, for 5 to 10 minutes. Remove from heat. The mass should be thick enough, but such that it can be freely stirred with a spoon.

You should pay attention to the fact that the mass solidifies very quickly, therefore, by this time, all other components should already be prepared.

Step 4

Put spices and peeled garlic in the hot pea mass. Pour in beet juice immediately. This ingredient will give the vegan sausage a beautiful pink color. Add vegetable oil here. Now all together you need to whip with a hand blender.

Step 5

Next, you need to transfer the pea puree to the prepared form. Cool first at room temperature, and then transfer to the refrigerator until completely cooled. This takes about two hours. After this time, turn the form onto the dish and squeeze lightly, the finished sausage will slide freely out of the form onto the dish.

Vegan pea sausage can be sliced and placed on bread, or sausage slices can be fried in a skillet.
