The history of the emergence of this variety is unusual. Unlike many others, she is not like a mysterious legend, much more like a common biographical fact. This is partly true: the history of the variety tells about the person who first planted it. One day, a Taiwanese named Lin Fengchi went to Fujian Province to study and pursue a career as a civil servant. In Fujian province, he settled with an old man who owned a tea plantation, who was also called Lin Fengchi. After the training was completed, the young man received a diploma, and the old planter, delighted to see his name on the diploma, presented the newly minted civil servant with a gift. Lin Fengchi brought home 36 trees from the tea plantation of an old man who lived in the valley and planted them in his mountains. Having taken root in the mountainous climate, the trees gave unique leaves, which turned into the dong ding variety, "Frosty Peak". The dong ding bush has been cultivated in the mountains of Taiwan since the early nineteenth century.

The tea leaves of this variety are lightly fermented, and the taste of the drink is a bit like milk oolong, as it contains milk-creamy notes. The leaves themselves are rolled by hand in the form of small balls. After brewing, these balls open into a single sheet, and with them the impeccable deep aroma of the drink is revealed. The taste of dong ding oolong is extremely multifaceted: you can also notice fruity and sweetish notes in it, floral aromas, and a light caramel aftertaste. Thanks to its worldwide fame, this variety is very widespread, almost all suppliers offer it for sale in other countries.

Correctly brewed dong ding has a rich amber shade of infusion, and after tea drinking there is always a noticeable and bright aftertaste with sweet notes. In order to properly prepare this variety, it is necessary to use only medium temperature water. The water should not be hotter than 70-80 degrees: boiling water will kill the delicate aroma of tea. It is necessary to infuse dry leaves no longer than a minute.
