The hearty creamy cheese soup has earned the greatest popularity in Italian, French, Czech and Slovak cuisines.

History of cheese soup

The birthplace of cheese soup is considered to be France, which has long loved cheeses and knew a lot about them. Initially, this soup was prepared as follows: the cheese was cut into slices and placed on the bottom of a plate, and then poured over with hot broth.

In preparation, you can use both hard and soft and processed cheeses. So, in Slovakia, for example, they use feta cheese. According to tradition, Slovaks dissolve feta cheese in water, and then add noodles to the soup, as well as lard and pepper. According to one version, it is the Slovaks who are the creators of the cheese soup. Italians grate cheese into a ready-made dish.

You will need:

- processed cheese - 3 pcs.;

- 150 g of sausage;

- potatoes - 3-4 pcs.;

- onions - 1 pc.;

- carrots - 1 pc.;

- butter;

- 2 liters of water or chicken broth;

- greens (parsley, dill, etc.);

- salt to taste.

Prepare the ingredients for the cheese soup initially. Peel the onions and chop finely. Wash carrots, peel and grate on a fine grater.

Put some butter in a multicooker bowl, and then put onions and carrots, stir, turn on the "Baking" mode and simmer for 20 minutes.

Cut the sausage (sausages can be used) into small cubes, then add to the vegetables in the slow cooker.

Wash the potatoes, peel and cut into cubes. Remove vegetables and sausage from the multicooker bowl, then add potatoes and cover with broth or water. Cook the potatoes in the Soup / Stew mode for about 60 minutes.

Rub the processed cheese with a coarse grater.

15 minutes after boiling the potatoes, add sausage and vegetables to it, and 5 minutes before the end of cooking, place the shabby curds in the soup.

After the specified time, the cheese soup is completely ready, it can be served along with croutons made from white bread. Don't forget to garnish the soup with herbs. Bon Appetit!
