    • 1 medium turkey;
    • 1 cup long grain rice
    • 1/2 cup pitted raisins
    • 2 eggs;
    • 3 tbsp butter;
    • 1-2 tsp ground ginger;
    • 1 onion;
    • 1 carrot;
    • 1 parsley;
    • 1 celery
    • 3-4 bay leaves;
    • 6 peas of black pepper.

Step 1

Singe the turkey, cut the wings off to the first link. Wash the inside and outside of the carcass, then dry it a little.

Step 2

Boil the rice until half cooked, discard it in a colander and rinse with cold water. Melt the butter. Wash the raisins in warm water and pat dry.

Step 3

Place melted butter, raisins and raw eggs in rice, salt and stir. Rub the outside and inside of the turkey with salt and ginger.

Step 4

Stuff the turkey with rice and sew it over. Take a saucepan or stewpan, brush the bottom with butter. Wash, peel and finely chop carrots, onions, parsley and celery.

Hold the cut piece between a fork and a knife to keep it from falling apart. Butcher the whole carcass, pour the sauce left over from the stewing over the turkey and add fresh herbs to it.
