On the shelves of seafood stores, you can often find krill - this is the customary name for small species of crustaceans that resemble small shrimp. They are mined commercially and then sold fresh, frozen or canned.

Krill are small planktonic crustaceans, whose size varies from 1 to 6.5 cm. The very name kriel means "trifle". They form commercial accumulations in the surface layers of the ocean. Krill began to be mined back in the 19th century, but its catch and harvesting did not reach industrial scale until the middle of the last century.

In the 70s of the XX century, a lot of krill began to be caught in the Antarctic waters of Japan and the USSR, therefore, the name "Antarctic krill" stuck to it. Currently, it includes almost 80 species of small crustaceans, among which Antarctic shrimp, about 6.5 cm in size, is usually supplied to factories and shops. It is often used for preserving and preparing various cold snacks and salads.

The value of krill meat

Krill meat is considered an organic food, because these crustaceans live in the unpolluted waters of the Antarctic Ocean. It contains many beneficial natural compounds, vitamins and minerals necessary for the human body. So, a very small amount of this product easily replenishes the weekly fluoride requirement. It is also rich in protein, assimilated by the body is much better than that contained in beef or eggs.

It enriches the body with many vitamins and minerals. It contains folic acid, riboflavin, thiamine and pyridoxine, and there are many vitamins A, E and PP in krill meat. Among the minerals in this product are sodium, phosphorus, potassium, magnesium, calcium and some iron.

The tender and very healthy krill meat can be used to easily make a delicious cold appetizer. To do this, you need the following products:

- 100 g of krill, frozen or canned;

- 6 chicken eggs;

- greens;

- 3 tbsp. tablespoons of mayonnaise;

- salt and black pepper to taste.

If using frozen krill, boil water, add salt, drop crustaceans into it, and bring them to a boil. Then remove, cool, peel and chop with a knife. The canned krill meat is simply finely chopped.

Boil the eggs hard-boiled, cool, peel and cut lengthwise into two parts. Gently remove the yolks, chop them, mix with krill meat, spices and mayonnaise. Then stuff with the cooked mass of squirrels and remove them from the refrigerator so that the filling in them hardens a little. After 2-3 hours, garnish the appetizer with herbs and serve.
