It is necessary

  • On a small roll 30 cm long
  • Dough:
  • - 125 g flour;
  • - 10 g of fresh yeast;
  • - 15 g of sugar;
  • - 60 ml of warm milk;
  • - 20 g soft butter;
  • - a pinch of salt;
  • - zest of half a lemon;
  • - 1 small yolk.
  • For the poppy filling:
  • - 55 ml of milk;
  • - 40 g of poppy;
  • - 20 g of honey;
  • - 0.5 tbsp. bread crumbs.
  • For the curd filling:
  • - 10 g butter;
  • - 35 g of sugar;
  • - 1 small egg;
  • - 100 g of cottage cheese;
  • - 0.5 tsp rum;
  • - 2 tsp starch.
  • - 75 g of thick jam.
  • - 1 yolk;
  • - 2-3 tbsp. milk.

Instructions

Step 1

Mix a tablespoon of flour with yeast, sugar and 25 ml of warm (but not hot!) Milk. Let it stand for about 15 minutes so that the yeast boils, then add the rest of the ingredients and knead the dough, which we knead thoroughly until a pliable and elastic consistency for about 10 minutes. Then we transfer to a greased bowl and leave to rise for an hour and a half, so that it doubles at least.

Step 2

While the dough is coming up, let's start filling. Combine milk with poppy seeds and honey in a small saucepan. We put on the stove and bring to a boil. As soon as the mixture boils, remove from the burner and cover with a lid. We leave for half an hour to steam out the poppy. Add the breadcrumbs and mix.

Step 3

Mix the butter (using a mixer) with cottage cheese, egg, sugar, rum and starch until smooth.

Step 4

Line the baking sheet with baking paper. Roll out the dough into a rectangle about 0.3 cm thick (you can do this directly on the parchment) and transfer it to a baking sheet. We will roll the roll on a baking sheet so as not to tear it when carrying it.

Step 5

First, grease the surface of the dough with jam, then lay out the poppy filling and cottage cheese on top. Roll up not too tightly and leave to come up for another 35-40 minutes.

Step 6

Preheat the oven to 170 degrees. We send the strudel into the oven for about 25 minutes, so that the roll will have a pleasant brown crust. Cool the finished roll and sprinkle with powdered sugar.
