Vitamin salad with red cabbage

Ingredients:

- 300 g of red cabbage;

- 1 tomato;

- 1 large cucumber;

- 1 bell pepper of any color;

- 6-8 radishes;

- 1 leek (white part) or 1 small onion;

- 20 g each of parsley and celery;

- salt;

- olive or vegetable oil.

You can easily diversify the flavor of a vegetable salad by adding a little table vinegar, apple cider vinegar or lemon juice to the dressing. Alternatively, you can season the vegetables with dried coriander, basil, paprika, garlic, or black pepper.

Wash all vegetables and herbs and pat dry on a paper towel. Cut red cabbage, cucumber and bell peppers into strips, leeks or common onions into half rings, radishes into half circles and tomato into cubes.

Chop the greens after cutting off the stems. Combine all prepared vitamin salad ingredients in one bowl large enough to stir. Salt the dish to taste, pour with olive or vegetable oil, stir and let it brew a little.

Hot Vitamin Vegetable Stew

Ingredients:

- 1 zucchini weighing 300-400 g;

- 500 g of white cabbage;

- 1 small onion;

- 5 medium tomatoes;

- 1 bell pepper;

- 1/3 tsp ground black pepper;

- salt;

- vegetable oil.

To easily remove the peel from the tomatoes, scrape the back of the knife until dark or scald with boiling water.

Peel and cut the courgette, onion and pepper into thin strips. Heat the vegetable oil and fry the onion in it until transparent, then add the pepper to it, cook for another 5 minutes over medium heat and lay out. Place the pan on the stove again, add more oil and simmer the sliced zucchini until soft. Meanwhile, peel the tomatoes and finely chop the red pulp. Chop the cabbage, dip it in boiling water, boil for 2 minutes and drain in a colander.

Mix all the components of the vitamin stew in one pan, where the zucchini is cooked, stir, pepper, salt to taste and simmer for 10-15 minutes at minimum temperature, covering the dish with a lid with a hole for steam to escape.

Vitamin semolina

Ingredients:

- 1 tbsp. water;

- 2 tbsp. semolina;

- 100-150 g frozen berries (blackberries, strawberries, raspberries, black currants, blueberries);

- 1/3 banana;

- 20 g of walnut kernels;

- 2 tbsp. cane or regular sugar.

Boil water in a saucepan or saucepan, throw berries into it. Boil them for a minute after boiling again and lay them out immediately using a slotted spoon. Gently pour the cereal in a thin stream into the bubbling berry broth and add sugar. Prepare semolina, stirring constantly to avoid lumps. Transfer it to a deep plate, stir in the berries, place the banana slices on top and sprinkle with crushed nuts.
