I propose a recipe for a delicious and easy-to-cook dish from beef or pork tongue. It is suitable for a festive table and for everyday meals.
It is necessary
- - tongue (beef or pork);
- - for broth: carrots, onions, bay leaves, peppercorns, salt;
- - for the sauce: 1 tablespoon flour, 2 tablespoons butter, 100 grams of raisins.

Step 1
Preliminary preparation of the language
The tongue must be washed and soaked in cold water for 2-3 hours. Then rinse again, cover with cold water and cook at low boil until tender. Cooking time - 3 hours; before the last hour of cooking, salt, bay leaf, peppercorns, carrots, onions and, if desired, other vegetables (parsley, celery, etc.) and spices should be put in the broth. As soon as the tongue is ready, you need to act very quickly: first, immerse it in cold water for 3 minutes, and then immediately remove the skin from it (otherwise it will be quite difficult to do this).
Step 2
Making the sauce
Rinse the raisins. Fry the flour with one tablespoon of oil, dilute 1½ cups of broth in which the tongue was boiled, add the raisins and cook over low heat for 10 minutes. At the end of cooking, salt, add the remaining oil and mix thoroughly; you can add a little lemon juice.
Step 3
How to serve
Cut the tongue into thin slices and place on a serving dish. As a side dish, you can use mashed potatoes, green peas, fresh or boiled vegetables. Pour sauce over tongue, garnish with parsley and dill.
