  • - 2 tbsp. l. white wine vinegar
  • - 2 tbsp. l. lemon juice
  • - 60 g butter
  • - 4 oranges
  • - salt and pepper to taste

Step 1

Spread the gutted duck with spices and salt. Chop off the incision in the belly with toothpicks. Shape the duck using culinary thread. To do this, you need to tie the wings together and thread the neck through them.

Step 2

Heat the oven to 190 degrees. Place the duck breast down on the wire rack. Place in the oven and place a cup of water under it. During cooking, water must be added periodically. Cook the duck for 1 hour. Then turn it over and pour over the fat. Leave to bake for another 1 hour. After that, increase the temperature in the oven to 220 degrees and fry for another 30 minutes.

Wash oranges. Juice two oranges, cut one orange into slices and peel the last one. Dissolve sugar in a saucepan, cool slightly and add vinegar and orange juice to it.

Step 4

Bring the resulting mixture to a boil and reduce by half. Then add the remaining duck fat after frying and bring to a boil. Then add butter, orange pulp, salt and pepper to taste.

Step 5

Put the finished duck on a large dish and pour over the resulting sauce. Decorate with orange slices and herbs.
