It is necessary

    • 50 g dried mushrooms;
    • 400 g pork loin;
    • 1 onion;
    • 1 tbsp milk;
    • 4 tablespoons bread crumbs;
    • 4 tablespoons rendered fat;
    • 500 ml of water;
    • 2 tbsp flour;
    • butter;
    • vegetable oil;
    • salt.

Instructions

Step 1

Pour boiling water over the dried mushrooms and leave them to swell for one hour. After that, drain the water into a separate bowl, squeeze the mushrooms with your hands and chop finely.

Step 2

Peel the onion, cut into strips and mix with the mushrooms. Fry mushrooms and onions in melted fat until almost cooked through. Lightly salt the resulting cutlet filling.

Step 3

Cut the pork loin into 5 mm thick pieces and beat them with a special hammer on both sides. Season each piece of meat with salt. Place one to two tablespoons of mushroom filling on each piece of loin, distribute it evenly. Put a small piece (about 10-15 g) of butter on top. Roll a piece of pork into a cutlet shape.

Whisk the egg and milk in a deep bowl. Place bread crumbs on a flat plate. Dip a peasant-style mushroom cutlet in a beaten egg on all sides, bread in breadcrumbs and fry in vegetable oil until an appetizing golden brown crust appears.

Step 5

Prepare the sauce. To do this, fry the flour in a dry frying pan until light brown. At the same time, the flour must be stirred continuously. Remove the pan from the heat and let the flour cool completely. Mix the flour with the water in which the mushrooms have been soaked. Stir everything until the flour lumps disappear completely.

Step 6

Put the pan on the fire, bring the sauce to a boil, and season with salt to taste. If desired, you can add a few tablespoons of sour cream.

Step 7

Put the side dish on a plate, pour the sauce over it. Place the peasant-style mushroom cutlet next to it. Sprinkle everything with chopped herbs and serve.
