It is necessary
- For biscuit:
- - 50 g each of butter and sugar;
- - 2 tbsp. spoons of cocoa and flour;
- - 1 egg;
- - 1/4 teaspoon baking powder.
- For mousse:
- - 320 ml heavy cream;
- - 100 g of icing sugar;
- - 4 egg yolks;
- - 1 tbsp. a spoonful of instant coffee;
- - 3 teaspoons of gelatin.
Instructions
Step 1
Heat butter on a fire, add cocoa powder with sugar to it, mix thoroughly. Remove from heat. Add sifted flour with baking powder, beat in an egg. Stir until dough is obtained.
Step 2
Place the dough on the bottom of a baking sheet lined with baking paper. Spread in an even layer. Bake the cake at 180 degrees for 10-12 minutes, check the readiness with a wooden stick. Cool the crust without removing it from the mold.
Step 3
Prepare the mousse: dissolve coffee in 2 tablespoons of boiling water, let cool. In a saucepan, mix the icing sugar with 4 tablespoons of water, and cook a thick sweet syrup. Beat the yolks in a mixer, pour in a thin stream of hot syrup, beat until fluffy. Prepare gelatin according to the instructions on the package, add to the yolks, mix quickly. Pour in coffee and cream, stir again.
Step 4
Pour the cooled sponge cake with the resulting coffee mousse, put it in the refrigerator overnight to freeze.
Step 5
Remove the finished cake with coffee mousse from the mold, decorate on top as you wish. For example, chocolate chips or coffee beans in chocolate. Serve with tea or coffee.
