It is necessary

  • For the test:
  • - butter - 50 g;
  • - cocoa powder - 2 tablespoons;
  • - sugar - 50 g;
  • - flour - 2 tablespoons;
  • - baking powder for dough - 0.5 teaspoon;
  • - egg - 1 pc.
  • For mousse:
  • - instant coffee granules - 1 tablespoon;
  • - egg yolks - 4 pcs;
  • - cream 35% - 320 ml;
  • - icing sugar - 100 g;
  • - gelatin - 3 teaspoons.

Instructions

Step 1

Pour instant coffee into a separate glass and pour 2 tablespoons of boiling water over it. Then set aside and do not touch until it cools completely.

Step 2

Transfer the butter to a loose saucepan. Put on fire, melt, then add cocoa to it. Mix this mass well, remove from the stove and combine with granulated sugar. Just add it not immediately, but gradually, while stirring all the time. Then put the baking powder, flour and one egg in the same place. Knead the dough from the mixture.

Step 3

A baking dish, preferably round, grease and place the finished dough on it in an even layer. Preheat the oven to a temperature of 180 degrees and bake the future cake base in it for about 10-12 minutes. When it's ready, cool it down.

Step 4

Place the powdered sugar and 4 tablespoons of water in a loose saucepan. Place the mixture on the stove and cook until it thickens.

Step 5

Beat the egg yolks, then add the resulting powdered sugar syrup to them. Beat this mixture until it becomes creamy. Then pour gelatin there. Mix everything well.

Step 6

Then add the coffee to the egg mass. Mix well and place the whipped cream in a separate bowl there. Thus, the coffee mousse is ready.

Step 7

Place the resulting mass on the cooled cake. Place the dish in this form in the cold for about 60 minutes. The coffee mousse cake is ready!
