A very quick and simple almond pie without flour from the capital of Galicia, Santago de Compostela. Traditionally, it is decorated with the image of a cross - in honor of the main cathedral of the Spanish city, but you can decorate it to your liking.
It is necessary
- - 300 g of almonds;
- - 300 g of sugar;
- - 1 large lemon;
- - 4 large eggs;
- - a pinch of cinnamon;
- - 2 tbsp. aromatic alcohol;
- - powdered sugar for sprinkling.
Instructions
Step 1
Chop the almonds as small as possible. I advise you to use a coffee grinder for this: add nuts with a tablespoon of sugar into it (take from the total so as not to overdo it with sweetness): the sugar will serve as an absorbent and will not allow the almonds to turn into an oily mass. You can also use prepared almond flour.
Step 2
Preheat the oven to 180 degrees. Line the bottom of the large split form with parchment paper, grease the sides with oil and sprinkle with flour.
Step 3
Beat eggs with sugar until fluffy. Remove the zest from the lemon with a fine grater and add to the eggs along with alcohol (I use cognac).
Step 4
Add the chopped nuts little by little, stirring with a spatula. Put the mass in the form and send to the oven for half an hour. The steel needle will come out of the pie without any dough crumbs when it is fully cooked. Remove the cake from the mold only after it has cooled completely and sprinkle with powdered sugar according to the template.
