Irish lamb stew is a delicious mix of tender meat, vegetables and mint. Mint goes well with lamb, the dish turns out to be very satisfying - for a family dinner or lunch, it's just that.
It is necessary
- - 800 g of lamb;
- - 400 g of white cabbage;
- - 4 potatoes;
- - 2 tomatoes, 2 carrots, 2 young zucchini;
- - 5 cloves of garlic;
- - 2 sprigs of fresh mint;
- - 1 onion;
- - 2 tbsp. tablespoons of vegetable oil;
- - pepper, salt.
Instructions
Step 1
Rinse the lamb meat, cut it into small pieces. Take two young zucchini, if they are large, then one will be enough. Cut the courgettes into halves or quarters. Cut the cabbage into large squares. Peel the carrots, cut them together with the tomatoes into cubes. Peel the onion, cut into half rings. Peel and chop the garlic. The ingredients for the stew are prepared.
Step 2
Take a saucepan with a thick bottom, heat the vegetable oil in it, fry the pieces of lamb until golden brown. Then add the onion and garlic, fry for another 7 minutes, stirring constantly so that the vegetables do not burn.
Step 3
Add prepared zucchini, cabbage, potatoes, previously peeled and cut into large pieces to the pan. Add tomatoes and carrots. Pour in 2 cups boiling water, salt the contents of the pan, cook for 1.5-2 hours over low heat.
Step 4
At the end of the stew, add black peppercorns, a few chopped fresh mint leaves. Irish lamb stew is almost done, cover the pan with a lid, let the dish brew a little. After that, place the stew in small portioned bowls and serve hot. You can additionally decorate the top with a sprig of mint.
