Pearl barley. Gray and unsightly "muzhik rice", as it is called by the people. Coarse cereal grains, which many dislike from childhood. It seems, and how did historians turn their language to call the tasteless barley the favorite porridge of Peter the Great? However, most people find this cereal coarse and ungrateful just because they don't know how to cook it properly. But if you do everything, for example, according to the recipe of William Pokhlebkin, then porridge from "pearl" cereal may well become the most favorite dish on your table.

- 1 liter of water;
- 2 pots of different sizes;
- 2 liters of milk;
- sugar;
- butter;
- 100 milliliters of heavy cream.
Instructions
Step 1
Go over and rinse the glass of pearl barley several times. Rinse until the water is clear. You can use a sieve or colander for this purpose.
Step 2
In the evening, soak the peeled cereals in 1 liter of water. Leave it overnight. William Pokhlebkin recommends soaking the barley for 10-12 hours.
Step 3
Check the result in a few hours. The groats are swollen, elastic and smooth. The water is completely or almost completely absorbed. If this is not the case, then the remaining liquid must be drained.
Step 4
Pour milk into a smaller saucepan and heat it to 40-42 degrees. While the milk is heating, pour water into a large saucepan and boil, then reduce heat to low. Then carefully place the cookware with the warmed milk in the saucepan. You have got a water bath, in which Peter the Great's favorite porridge will be prepared.
Step 5
Pour your cereal, sugar into the milk and mix. More porridge cannot be touched all the time of cooking.
Step 6
Watch the water level in the lower pot while cooking. Add boiling water as needed. The time for boiling pearl barley in milk is at least 6 hours.
Step 7
Check the result after 6 hours. During this time, the milk has melted, becoming creamy pink, the porridge has been melted to the state of the most delicate cream. All the "shrapnel" was gone from her, and the color from grayish became pearl. A brownish milky crust has formed on top, which can be thrown away, or mixed into the finished porridge.
Step 8
Add butter to the finished dish or pour in 100 milliliters of heavy cream, mix. You can set the table and collect applause from family members.
