There are countless recipes for squash caviar and each of them is unique in its own way. I suggest you cook it not quite usually, namely: in a multicooker. Zucchini caviar prepared in this way turns out to be very tender and tasty.

It is necessary

  • - young zucchini - 500 g;
  • - onions - 2 pcs.;
  • - carrots - 2 pcs.;
  • - sweet bell pepper - 1 pc.;
  • - ground red pepper - to taste;
  • - paprika - 0.5 teaspoon;
  • - salt - 1 teaspoon;
  • - ground black pepper - to taste;
  • - sugar - 1 teaspoon;
  • - tomato paste - 2 tablespoons;
  • - vegetable oil - 4-5 tablespoons.

Instructions

Step 1

First, peel the onions and carrots. Then chop these vegetables with a knife into medium-sized pieces. Pour sunflower oil into the multicooker bowl, put chopped onions and carrots into it and cook in the "Baking" mode for 20 minutes. During this period of time, the mixture of vegetables should be mixed several times, as it should.

Step 2

Grind young zucchini together with bell pepper, cut into cubes, and add them to the multicooker bowl to the rest of the vegetables. Cook this mass in exactly the same way, that is, in the "Baking" mode for 20 minutes.

Step 3

After the time has passed, add the following to the mixture of vegetables: granulated sugar, salt, as well as tomato paste, paprika, black and red ground pepper. You can replace the latter with fresh chili. Stir everything properly, then cook in the "Sauté" mode for 35 minutes, stirring occasionally.

Step 4

Then let the resulting mixture of vegetables cool for a while, then beat with a blender until then, until you end up with a homogeneous mass of puree.

Step 5

Put the resulting vegetable mass in a jar. Squash caviar cooked in a slow cooker is ready! If you want to prepare it for the winter, then after cooking, place it in a suitable saucepan, bring it to a boil and place it on sterilized glassware and roll it up tightly.
