In the summer, when there are fresh berries, why not make such a rich cake?
It is necessary
- For cakes:
- - 440 g flour;
- - 80 g cocoa;
- - 2 eggs;
- - 400 g of sugar;
- - 2 tbsp. vanilla sugar;
- - 3 tsp baking powder;
- - 140 g of vegetable oil;
- - 200 g of fatty sour cream;
- - 220 ml of strong brewed coffee.
- Blueberry cream:
- - 200 g of fresh blueberries;
- - 250 g heavy cream;
- - 150 g icing sugar;
- - 420 g cream cheese.
Instructions
Step 1
Preheat the oven to 180 degrees and prepare 3 forms with a diameter of 20 cm (you can cook 1 cake on a large baking sheet and then cut it into pieces). Sift flour with baking powder and cocoa powder.
Step 2
In a separate bowl, use a mixer to beat eggs with two types of sugar until fluffy. Add sour cream and vegetable oil to the egg mixture, beat again. Add strong brewed coffee and stir.
Step 3
Combine dry ingredients with liquid ingredients and mix until smooth. Pour the dough into molds and place in the oven for about half an hour. Cool completely.
Step 4
For the cream, mash the berries with a crush. Drain the juice to get rid of excess moisture.
Step 5
Combine all other cream ingredients separately using a mixer. Add the berry puree to the mixture and stir again. Put the finished cream in the refrigerator for a couple of hours.
Step 6
Spread the cream on the cakes, decorate the sides and top of the cake with it. Refrigerate overnight. Garnish with white chocolate chips, mint leaves and fresh blueberries for serving!
