Step 1

First of all, you need to thoroughly rinse the chicken breast under running water. Then let it dry completely.

Combine ingredients such as paprika and pepper in a fairly deep bowl. If desired, add any other spices to this mixture to your liking. Mix the resulting dry mass of seasonings well, then roll chicken meat in it on all sides. Then rub it with sea salt and cover with cognac. By the way, if you don't have sea salt, then replace it with regular salt. Just do not forget in this case to reduce its amount to 200 grams. In this form, send the meat, covered with a lid, to the refrigerator for about 10-12 hours.

After a specified period of time has passed, remove the chicken meat from the saline solution, rinse it thoroughly under running water in order to remove all salt and seasonings from the surface. It is not worth keeping the breast in the solution for longer than the specified time.

Step 4

After blotting the chicken meat with paper towels or a towel, wrap it in several layers of gauze and place it in the refrigerator for at least a day. The chicken is ready! If you want the fillet to dry out more, then keep the breast in the refrigerator for 3-4 days.
