Vichisoise is a traditional Parisian and delicious cream soup. Louis Diet, chef at the Ritz-Carlton in New York, named his aromatic, hearty, rich meal after the French resort town of Vichy. This soup is sometimes called onion soup, as leek is an indispensable ingredient.

It is necessary

  • - 2 pieces of leeks;
  • - 500 ml chicken broth;
  • - onion;
  • - 3 potatoes;
  • - 120 ml cream (33%);
  • - 3 tablespoons of butter;
  • - 400 ml of milk;
  • - 50 g of hard cheese;
  • - freshly ground white pepper;
  • - 14 g of olive oil;
  • - paprika;
  • - salt.
  • For filing:
  • - 200 g of unpeeled shrimp;
  • - 0.5 pieces of fennel;
  • - 1 tablespoon lemon juice;
  • - olive oil;
  • - 2 cloves of garlic;
  • - a pinch of nutmeg.

Instructions

Step 1

Cut off the white part of the leek, rinse, dry and chop finely. First cut lengthwise, then in half rings. Peel potatoes, onions, cut into small cubes.

Step 2

Heat the olive oil and butter mixture in a saucepan. Fry the leeks, about 5-7 minutes, until tender. Stir occasionally and do not brown.

Step 3

Add the potatoes to the pan in which the leek has been sautéed, then simmer for 5 minutes. Next, pour in so much chicken broth so that it only covers the vegetables on top.

Step 4

After boiling, continue simmering over medium heat for 10 minutes. Combine the cream with milk, pour into the soup, boil over low heat for another 10 minutes.

Step 5

Season with salt, white pepper, add a pinch of nutmeg if you wish. Pour the soup into a blender bowl, beat until smooth. While the platter cools down, tackle the shrimp.

Step 6

Fry the shrimps in olive oil. Slice the fennel and place on top of the shrimp, simmer for 10 minutes. Sprinkle with chopped garlic. Season with lemon juice.

Step 7

Vichyssoise soup is usually served cold. But some also liked it warm, so onion soup can be eaten chilled both in winter and in summer.

Step 8

Place in each plate a few fennel stewed shrimp and stew sauce, sprinkle with ground paprika. Bacon or vegetable salad is offered with the dish - cucumbers with green onions and red bell peppers. Cucumbers are peeled or crushed into strips, bell pepper is added.
