- - ham 1, 5 kg
- For the marinade:
- - onion 1 pc.
- - garlic 2 cloves
- - vinegar 2 tbsp. l.
- - honey 1 tbsp. l.
- - hot chili paste
- - salt pepper
- For garnish:
- - potatoes 500 g
- - carrots 500 g
- Gremolata
- - bunch of parsley
- - garlic clove
- - zest of 1 lemon
Instructions
Step 1
Peel the garlic, crush or squeeze through a press, mix with vinegar and honey, grate the ham with the resulting marinade.
Step 2
Peel the onion, cut into rings. Place one layer on top of the meat, the second one under the meat.
Step 3
Place the marinated meat in a saucepan, close the lid tightly and put in the refrigerator for several hours. Better to marinate the meat overnight. From time to time, the marinated meat must be turned over.
Step 4
After pickling, the onion and marinade are peeled from the meat, the ham is placed in a large frying pan or baking sheet and placed in an oven preheated to 220 degrees for 15 minutes.
Step 5
Remove the baking sheet from the oven, pour over the meat that has been released, pour the marinade on the sheet without onions, return the meat to the oven for another 15 minutes, while reducing the temperature to 200 degrees.
Step 6
Small peeled potatoes are laid out around the meat, mix it with fat and meat juice, continue to bake for another 15 minutes.
Step 7
Carrots are added to the potatoes, they are also rolled in meat juice and fat, baked for another 20 minutes
Step 8
Do not forget to water the meat with juice every time. Check if the meat is baked against the bone. If light juice is released, then the baking sheet is removed from the oven, covered with foil on top for 15 minutes.
Step 9
Prepare the gremolata: finely chop the garlic and parsley, rub the lemon zest on a fine grater, mix everything. Before serving the dish, the ham is sprinkled with gremolate.
