Traditionally, pies with fruit fillings and ingredients are baked in Russia. In this regard, carrot cake will certainly seem unusual, but no less tasty from this. It is easy to prepare and will be very useful on winter evenings.

- 4 eggs;
- 300 g sugar;
- 1 tbsp vegetable oil;
- 250 g flour;
- 2 medium carrots;
- 100 g of nuts;
- 1, 5 tsp baking powder;
- 1 tsp soda;
- 1/2 tsp salt;
- 1, 5 tsp cinnamon.
- butter for lubricating the mold;
- semolina;
- For glaze:
- 1 pack of Philadelphia curd cheese;
- 60 g butter;
- 220 g icing sugar.
Instructions
Step 1
Beat eggs with a mixer. Gradually add sugar in portions, continuing to beat continuously for several minutes until a fluffy white gooey mass is obtained.
Step 2
Add vegetable oil. Continue to beat with a mixer.
Step 3
Sift flour with baking powder through a sieve. Add baking soda, salt and cinnamon. Stir and add the resulting mixture to the egg-oil mass. Stir well until a smooth, lump-free consistency is obtained.
Step 4
Wash and peel the carrots. Rub it on a fine grater.
Step 5
Chop the nuts. For a more interesting taste of the pie, it is better to use several types of nuts (walnuts, almonds, hazelnuts).
Step 6
Add grated carrots and chopped nuts to the dough and mix thoroughly.
Step 7
Brush a detachable round dish with a diameter of 24 cm with butter and sprinkle with flour or semolina. Put the finished dough in a mold and bake in a preheated oven for 45-50 minutes at a temperature of 180 ° C.
Step 8
Remove the finished carrot cake from the oven and cool.
Step 9
To prepare the glaze, beat the butter with a mixer on a slow speed. Add curd cheese and stir until smooth. Add the icing sugar gradually, continuing to beat with a mixer.
Step 10
Cover the carrot cake with the finished icing and let it set.
