Your whole family will love this delicious potato soup that can be made in just a few hours. Hearty, tasty, and most importantly very healthy.
It is necessary
- -2 medium potatoes
- -1 small head of cauliflower
- -1 and 1/2 cups chicken stock
- -1 and 1/2 cups 1% skim milk
- -salt and freshly ground black pepper
- -1/2 cup fresh sour cream
- -10 tablespoons grated cheddar cheese
- -sliced green onions
- -3 slices of bacon or brisket
Instructions
Step 1
Rinse the potatoes thoroughly under running water and peel them. For cauliflower, separate the buds from the stem and remove the foliage. Cook the potatoes in a saucepan and mash them.
Step 2
In a saucepan, boil the cauliflower inflorescences until medium soft, drain the water. Combine mashed potatoes and cauliflower in a blender. Grind all ingredients thoroughly for a few minutes. Transfer everything back to the pot.
Step 3
Add chicken broth, milk to a saucepan and put on low heat. Simmer everything for 15-30 minutes.
Step 4
Transfer the resulting mixture to baking pots, sprinkle with cheese on top and place in the oven for 10 minutes at 200 degrees.
Step 5
Sprinkle with herbs and add slices of bacon or smoked brisket before serving. Bon Appetit!
