Zucchini are very healthy and low-calorie vegetables. Winter squash salad is an alternative to squash caviar. They can be served as a cold appetizer for meat or mashed potatoes.

- - 2 medium zucchini;
- - 4 carrots;
- - 4 onion heads;
- - 4 heads of garlic;
- - vegetable oil;
- - 1, 5 Art. tablespoons of salt;
- - 1 tbsp. a spoonful of vinegar 9%.
Instructions
Step 1
Rinse the zucchini under running water. Peel and seed. To cut in cubes. Fry in vegetable oil.

Wash the carrots, peel and grate on a coarse grater. Fry in vegetable oil separately from the zucchini.

Cut the onion into half rings. Fry in vegetable oil.
Step 4
Place the zucchini, carrots and onions in the roasting pan. Add 0.5 cups of boiled water. Simmer for 10 minutes.
Step 5
Peel the garlic. Chop finely and add to vegetables. Salt to taste. Add vinegar.
Step 6
Prepare banks. Rinse with hot water and baking soda. Sterilize in a water bath. Boil metal lids.
Step 7
Arrange the finished vegetables in jars and roll up the lids.

Turn upside down and put under a fur coat until it cools completely. Once cooled, immediately place in the refrigerator.
