Instructions
Step 1
Preparing the eggs. Cook the quail eggs hard-boiled for five minutes. Then we transfer them to cold water and cool. This is done to make the eggs easier to clean.
Next, we clean the eggs from the shell and cut off the top from them. Carefully remove the yolks.
Step 2
Cooking the filling.
Finely chop the egg yolks and mix them until a homogeneous consistency with mayonnaise, mustard, salt and pepper.
We fill the whites of quail eggs with this composition.

To prepare the tomatoes, cut each cherry tomato in half and gently use a teaspoon to remove the pulp.
Step 4
We make the mushrooms ourselves.
On the protein, stuffed in advance, we put on a tomato hat. Thus, small "mushrooms" are obtained.
Then we take wooden skewers and string on each of two "mushrooms".
Step 5
Using a toothpick, make mayonnaise dots on the tomato caps. Sprinkle the bases of the mushrooms with herbs or chopped green onions.
