It is necessary

    • 1 kg of potatoes;
    • 2 large onions;
    • 6 eggs;
    • 1 tsp salt;
    • 100 ml of vegetable oil for frying.

Instructions

Step 1

From one kilogram of potatoes, you will be able to make two large tortillas with a diameter of about 24 cm. If you want to make small omelettes, cut the original amount in half.

Step 2

Peel the potatoes, cut them into thin slices 1-2 mm thick. The easiest way to do this is with a food processor or a special grater-slicer. Cut the peeled onions into rings or half rings, whichever is more convenient for you.

Step 3

Heat vegetable oil in a frying pan, send prepared onions and potatoes into it, reduce heat and simmer for 15-20 minutes, remembering to stir occasionally. At the same time, the potatoes should not brown. As soon as it becomes ready, remove the pan from the heat, drain the excess oil, but do not pour it out at all, it will still come in handy.

Step 4

Break 3 eggs into a bowl, add salt, mix well with a fork or whisk. Put the potatoes out of the skillet, divide into two, set one aside for now, and mix the other with the eggs.

Step 5

Pour a little oil into the pan from the amount that you previously drained from the potatoes, heat well. Put the potato and egg mass into it, smooth out with a wide knife or kitchen spatula.

Step 6

Reduce heat, fry the omelet at medium temperature until golden brown on the bottom. As soon as it appears, the tortilla must be turned over. To do this, take a plate with a diameter slightly larger than a frying pan, cover the omelet with it, turn the resulting structure over, slide the omelet back into the pan. Fry the second side in the same way as the first.

Step 7

From the remaining 3 eggs and potatoes, you can make a second tortilla, or you can put them in the refrigerator so that the next morning you do not take as much time to prepare breakfast as today.

Step 8

Tortilla de patata is delicious both hot and cold. It is best served with sour cream or vegetable salad.
