Ingredients for the dough:

  • Flour - 100 g;
  • Coarse flour - 90 g;
  • Butter - 130 g;
  • Ice water - 3 tbsp;
  • Herbal salt - ¼ tsp;

Filler Ingredients:

  • Cheese - 150-200 g;
  • Canned tomatoes - 800 g (2 cans);
  • Garlic - 1 clove;
  • Onions - 1 pc;
  • Basil;
  • Egg - 2 pcs;
  • Milk or cream - 200 g;
  • Freshly ground white pepper;
  • Salt.

Preparation:

  1. The first step is preparing the dough. To do this, mix both types of flour with herbal salt. Grind the butter with flour. The texture of the mixture should be similar to bread crumbs. Pour in ice water and knead the dough with quick movements. Place the resulting mixture in the refrigerator for an hour.
  2. While the dough is chilling in the refrigerator, the filler is being prepared. Place the canned tomatoes (along with the brine) in a saucepan. Add chopped onions, crushed garlic, and a spoonful of basil to a saucepan.
  3. Cook over moderate heat until the tomato mixture thickens. Set aside filler to cool.
  4. Beat eggs with cream or milk. Add cheese, previously grated on a fine grater and prepared tomato mixture, mix well. Season with salt and pepper to taste.
  5. Then you need to collect the cake. Roll out the cooled dough in a thin layer and place it in a mold about 25 cm in diameter. Pierce the base with a fork and place the foil around the edges so that the dough does not shrink during cooking.
  6. Place in refrigerator for about 30 minutes.
  7. Bake the dough in an oven preheated to 200 degrees for 10 minutes. Remove foil. Fill the base of the cake with the filling and bake for another 20 minutes until the filling is done.
  8. Decorate the pie with chives and tomato slices.
