  • - vinegar - 1 teaspoon;
  • - salt - 1 teaspoon;
  • - olive oil - 4 tablespoons;
  • - butter for coating layers.

Step 1

The first step is to prepare the filo dough. To do this, sift the flour into a deep bowl, add salt, vinegar and water, mix with a fork. Next, they begin to knead the thick dough with their hands, gradually adding a teaspoon of oil. Knead until the dough is elastic and smooth. Then it should be left alone for half an hour, wrapping the bowl with plastic wrap.

Step 2

At this time, you can do the stuffing. To do this, boil all the potatoes with their peels in salted water. Then drain it, remove the "uniforms" from the potatoes and cut into thin circles. Rinse greens, dry, chop finely and mix with sour cream in a separate bowl. Season with the selected spices. Hard-boiled eggs, cool and cut into small slices. Do the same with the mozzarella and cut the salami into cubes.

Step 3

It's time to get back to the filo dough. From the total mass from the bowl, it is necessary to tear off small pieces and roll them into thin, almost transparent sheets. They are stacked on top of each other. Using a culinary brush, each previous layer is thinly smeared with melted butter. The process will go faster if you arm yourself with a pasta machine. However, at home, filo is prepared exclusively by hand and in no less than 120 layers.

Step 4

Grease the selected form and lay two-thirds of the filo dough, not forgetting the sides. Finely chop the washed and dried greens and mix thoroughly with sour cream, seasoned with salt and pepper. Lay the filling in layers: potatoes, eggs, salami and cheese. Pour sour cream with herbs. Cover the remaining third dough and pinch all edges.

Step 5

Preheat the oven to 180 degrees, place the pie in it and bake for half an hour. Garnish with sprigs of fresh herbs, small cherry tomatoes or figuratively chopped radishes before serving.
