However, according to gourmets, the recipe for lamb kharcho soup is considered the most delicious. It is quite simple to prepare it, you just need to stock up on the right products.

For homemade lamb kharcho you will need:

  • lamb (tenderloin) - 0.5 kg;
  • rice - 1 glass;
  • garlic - 1 head;
  • onion - 2 heads;
  • tomato paste - 70-100 g;
  • ground black pepper;
  • salt.

Lamb kharcho soup recipe

First, you need to prepare the broth for the future soup. To do this, the washed lamb is dipped in cold water and put on a medium-strength fire.

While the broth is being prepared, you can proceed to creating the "filling" of the kharcho soup. First of all, the onion is peeled and cut into rings, after which it is fried in a pan. As soon as the onion becomes transparent, the pre-chopped half of the head of garlic and a sufficient amount of tomato paste are added to it.

It is also worth adding a little water, after which you need to cover the dish and simmer for about 7-10 minutes.

While the base of the future soup is being stewed, the meat should be taken out of the finished broth and cut into medium-sized pieces. In this case, the broth continues to remain on an open fire and a glass of rice is added to it.

After 8-10 minutes, depending on the selected type of rice, the contents of the frying pan are added to the broth, which should have already been stewed. Also, chopped meat and the remaining chopped garlic are placed in the soup. Salt and pepper are added.

After that, cover the pan with a lid and cook the soup for another 3-4 minutes, then turn off the heat and let it brew. The result is a rather thick homemade lamb kharcho soup. Bon Appetit!
