Do-it-yourself marshmallows, unlike purchased ones, have many useful substances and have a beneficial effect on health.
It is necessary
- For 24 pieces:
- - 2 apples (Antonov's best);
- - 80 g of sea buckthorn;
- - 420 g of sugar;
- - 2 squirrels;
- - 80 ml of water;
- - 5 teaspoons of agar agar;
- - 50 g icing sugar
Instructions
Step 1
Cover agar-agar with water, leave to swell. Prepare the sea buckthorn. Bake it in the microwave until soft for 15 seconds 2-3 times.
Step 2
Pass the berries through a sieve. You should get 50 g of puree.
Peel and seed apples.
Step 3
Send the sliced apples to the microwave to bake for 15 seconds in 3 sets.
Step 4
Chop the softened apples into a puree. Measure out 150 g and rub through a sieve.
Step 5
Combine sea buckthorn puree with apple cider, stir with 200 g of sugar. Wait until it cools down.
Step 6
Transfer the cold puree to a mixer bowl and begin whisking. Add protein and continue beating for about 3 minutes.
Step 7
Add more protein and beat for another 5 minutes. Put the swollen agar on the fire, but do not boil.
Step 8
The mass should be the consistency of a thick jelly. After removing from heat, immediately add 220 g of sugar.
Step 9
Stir well and return to heat. After boiling, reduce the flame to low and cook at 110C for about 5 minutes.
Step 10
If not a thermometer, then the readiness of the syrup should be checked as follows: after dipping a dry spoon into it, the thread should stretch.
Step 11
After removing the syrup from the heat, pour it into the fruit and applesauce, whisking constantly. The whipping time is 10 minutes.
Step 12
Fill 2 pastry bags with marshmallow paste. Using the "star" attachment, place the blanks on parchment or on a wooden cutting board moistened with water.
Step 13
Leave to set for 12 hours. After the time has elapsed, connect the halves together, sprinkle with powdered sugar.
