Lentils are a representative of the legume family, which is undeservedly deprived of attention by most of our fellow citizens. Mshosh is a traditional dish of Armenian cuisine, which is suitable for fasting, dieting and for replenishing protein in the body.

Mshosh is useful for breakfast, since the dish improves digestion and starts metabolism, can be used as a cold snack, spread on bread or served hot with meat dishes.

To prepare the dish you will need:

- lentils - 1, 5 cups;

- dried apricots - 0.5 cups;

- walnuts - 0.5 cups;

- onion - 1 pc;

- salt - to taste;

- ground black pepper - to taste;

- vegetable oil - 1-2 tbsp. l;

- parsley - 1 bunch.

We sort out the lentils, rinse and fill with cool water, then cook for half an hour. Unlike other legumes, lentils do not need to be presoaked. Finished lentils should be soft and the grains should retain their shape. Add salt at the end of cooking.

While the groats are being prepared, we wash the dried apricots, and chop the walnuts.

Peel the onion and cut into small pieces. Heat the sunflower oil in a frying pan and sauté the onion until transparent. Put dried apricots in a bowl with lentils, without chopping dried fruits, nuts and fried onions. We reduce the gas to a minimum and simmer the mschosh for another 10-15 minutes, stirring occasionally.

Sort out the parsley, rinse and remove the excess liquid by shaking it several times. Then chop the parsley very finely. Spread Mshosh on a flat plate, sprinkle with ground pepper and chopped herbs.
